Super Yummy Thai Mango Salad

A salad should be refreshing, crunchy and coated well with yummy dressing. However simple you make a salad, make sure to season it well and dress it well.

Well as we all know Thai cuisine is famous all over. The fresh ingredients makes Thai Cuisine stand out and so irresistible to anyone. One of it is their Thai Mango Salad. It can be made both with raw and ripened mangoes, and I have used Ripened Mangoes in my recipe.

This recipe is quite a delicious one and it got me the ‘Jury Award’ in one of the cook-offs recently in the salad category. Make sure you try it out its simple and just delicious.


  • Ripe Mango sliced – 2 cups

  • Corn kernels –  ½ cup

  • Bell peppers Red & Green shredded – ½ cup

  • Jalapeno sliced – 3-4

  • Honey – 1tsp

  • Olive oil – a drizzle

  • Soy sauce – 1tsp

  • Coriander leaves – few sprigs

  • Salt and Pepper to taste

  • Peanuts roasted – ½ cup

  • Lime juice – ¼ cup

  • Zest of a lime – 1

  • Sugar a pinch


  • In a bowl whisk the olive oil, honey, soy sauce, lime juice, lime zest, pepper, sugar and salt and set it aside.

  • In another bowl add the mango slices, corn, jalapeno, bell peppers, roasted peanuts and toss it well.

  • Add the dressing over it and toss until well combined. Check the salt and add as required.

  • Make sure to add the dressing only while serving to retain the crunchiness and freshness of the veggies.

  • Finish it up with a few sprigs of coriander leaves and serve.
